a personal trainer approved piña-colada.
this was not the plan… shooting a cold drink on a snow day in texas.
the plan was to post buffalo nuggets for everyone (especially my fitness competitor friends… i’ve been leaving them high and dry lately with all the baked goods i’ve been posting… sorrynotsorry). but once i tried this, everything changed. at $7.00 bucks-a-pop, there was no way on earth i could afford this newfound addiction after my workout every day! i never imagined a budget could inspire such swift resourcefulness… i immediately went to whole foods and bought all the fresh ingredients to make a weeks worth of them for $6.50 (not including the protein powder i had on hand at home). so the bison got bumped… but don’t worry, it’s coming!! :)
then, it snowed. real snow is rare in dallas. whenever it dips below 33 degrees, we usually get sleet, freezing rain, and terrible icy roads littered with people incapable of driving in such conditions. this time, it actually snowed big, fat, beautiful snowflakes! it was glorious… especially when you can work from the cozy comfort of your own home!
things were quite cozy… i drank my coffee and spent time in the word a little longer than usual as i watched the snow fall outside. i played around with ingredients in this recipe until i got it just right… at which point i had to hurry up and take pictures before i “taste-tested” the entire thing! :) while shooting, i noticed the reflection of the window pane on my mason jar… and that’s when the coziness came to a freezing halt.
the only obvious solution was to open the windows and get rid of the glare. enter snow and 20 degree weather… inside. (do you know how much i love you??)
okay, so let’s talk about this smoothie/protein shake. adding fruit to a protein shake isn’t something i usually do… but that’s only because i’m so fond of chocolate and peanut butter. (can you blame me?) this recipe was a game changer though… kale yeah! it is loaded with fruit, veggies, (healthy) fat, and protein!! boom-shaka-laka! a super-food piña-colada, minus alcohol (or maybe not). this recipe makes 24 ounces, about 2 servings. each serving is 169 calories, 18 grams of protein, and only 6 grams of sugar!
i promise you any child unwilling to eat their veggies will be all over this smoothie… especially a little boy. just call it an “incredible hulk” smoothie. sold. :)
ingredients
- 2/3 c unsweetened vanilla almond milk
- 2 large hand-fulls (~50 g) kale ~the leaves of about 8 stalks
- 1/3 c (~80 g) pineapple chunks
- 1/2 (~50 g) ripe avocado
- 1 scoop protein powder (i used vanilla)
- 1 c ice cubes
instructions
- put all ingredients into a blender and puree until smooth!
Notes
to get the most nutrients out of your fresh fruits and veggies, it's best to drink immediately, but you can refrigerate it in an air tight jar for up to 2 days.
